You've probably decided already, but I went through the same dilemma over the summer and I'm now totally happy with 52/36 and a 28 on the rear. This was fine in the Alps and I am by no means a powerful / good rider, wasn't even really mashing up the climbs. Took a bit of getting used to overall after a couple of years of 50/34 11-25 but the inches work out as broadly similar I think. I prefer it now.
Not sure if it says on Canyon but it might be worth asking if the rear mech is long cage - the short cage ones are a bit limiting on cassette size (I haz this issue with 5800).

I believe the 6800 short cage has a max of 28t, while the long cage goes out to 32t, so should be fine with the short.
