In the mountains I am more worried about handling and braking going down than weight going up, and also repairs/spares when abroad. I base my wheel and tyre choice on that, so it's always handbuilts for me. Definitely no carbon clinchers.
You don't want to take anything deep to Ventoux - the clue is in the name. Low profile carbon tubs are probably the best wheels for the job, but.. tubs...
