Why should you always hold in a position that bends the wrists down - surely the best position is in a neutral and natural wrist position ? Maybe Moser and Fignon and Bugno and ...well just about every pro rider would have held done better with your advice if only it had been available to them and their coaches and held on to the flat part of their pursuit bars.
With these bars you should always hold on the flat position and usually it is adjusted to be in level with the ground. Different riders prefers different position ofcourse. The ends should only be cut the amount that gives nice position for the brake lever to be pulled. So the last bit is pretty much there to give room for adjusting the brake lever. Find out a nice spot for that and then cut the extras. If you like braking like that then it is fine but it just looks that the brake lever is a bit far from the middle flat space of the bar where you are supposed to have your arms. Whatever works fot you ofcourse!
