the recipe is designed to make these sandwhiches but I had people coming round for a roast and thought it sounded good enough to do for that.
Adding miso to the gravy just makes it super umami. I sperated the cooking liquor our into 2 batches. One for gravy and one which I added some Gochujang and Sriracha to spice it up. Strained both through a fine sieve as it was a little grainy.
Some sourdough, shredded short rib, mustard/wasabi and some mont d'or cheese - will be dunked greedily into a steaming bowl of gravy.
I'm in love with that site FYI and am going to do the jerk porchetta recipe for xmas :)

It was excellent.
The miso gravy was the real revelation though - I knew the short rib would be good.
I'm going to make some of the giant pork buns this weekend to go with our Chinese hot pot

Did sea bass with mixed herbs in salt and IPA crust, again. This time I added more citrus flavor in the form of lemon zest in the belly and in the crust as well as orange slices between skin and salt crust. Win.

I made an assortment of roasted normal and sweet potatoes with red onion and maroccan olives. As well as a second side of roasted cherry tomatoes.
