The bike will be used for commuting, general day rides, maybe the occasional bit of touring

Why bother with deep carbon? Just get some half decent 29er wheels

Even ZTR Crest was more than enough for the task listed.

Do you have Crests? I know they're light but there's about a million threads on other forums with people complaining about it being a very tight fit for tyres and many people giving up when fitting 28s or similar even with skinny stans tape...
