I am 170cm (5'7") and I had small ultimate (376mm reach) with 110mm stem .. my current bike has 381mm reach and 555mm stack, I just use it with 110mm stem and just the 10mm conical spacer.
Don't be afraid of canti; I went Tektro RX5 Mini V on my winter bike and they are absolutely fine; as good as caliper brake. Just cut the housing correct length and learn how to set them up properly.
