I'm about 62kg. I've been running about 80psi on my 700c archetypes on my road bike (I used to run 100-110 on my old rims) but that felt excessive on my new rims.
No idea about wider nobblies.
I ran it a lots lower than you (80kg).
No rocket science, as long it feel smooth, but not squrimy.
Bigger tyres have less risk of pinch puncture, unless you ran it at a silly pressure like 20psi.
