Thanks for posting that Damascus steel video.
A quick google brings up:
https://en.wikipedia.org/wiki/Damascus_steelhttps://en.wikipedia.org/wiki/Wootz_steel
http://www.nytimes.com/1981/09/29/science/the-mystery-of-damascus-steel-appears-solved.html
which seem to suggest that the modern 'Damascus' steel is missing something from the
steel of antiquity.I'm also certain I've seen a tv documentary on sword making,
where a Brit or European black/bladesmith made a 'samurai' sword
which involved continued beating and folding of a billet of steel
to achieve the 'thousand layer' effect. -

How should I be storing my kitchen knives? A magnetic strip is bad news if mis used, I don't trust the other person living here to use that correctly. Wood block or is that a bit blunty too? Nothing too over the top designer ish please.

When I finally get round to moving into our new place I'll be getting one of those magnetic strip types that are imbedded in wood. For now my nice ones live in a cheap knife bag which would stop randoms using them if that's what you're implying ^
The other problem with those wood block types is bacteria can build up inside (so I hear anyway).

If you use a wood block, put them in 'upside down' with the spine sliding along the lower egde of the slot in the block. Prevents any blunting effect.
I use a magnetic strip. The instructor at Pru Keith's knife skills workshop today me they are the best choice.
Having said that, the wooden magnetic one up there ^ is très pretty.

I have a sideways wooden block. Guess that's better than a vertical wooden block and forgetting to put the knives in upside down.
No idea where I got it, probably TK Maxx or summat.

A few questions for the sharp minds of the knife thread.
Can someone recommend a (cheapish) whetstone and some training wedges? I don't have fancy Japanese knives so I understand I want something like a 400/1000
Can someone tell me what a steel is for and if they wear out?
My Father-in-law(ish) has a one of these which I like using:
Global handles and my hands don't get on though. Can any recommend something with a similar shape blade? Can it be had for £30?
Yes. That is nice.
