Using usualy arborio but sometimes carnaroli.

Take chicken breast, fillet as thin as you can without cutting yourself. Use a meat hammer to flatten furthermore. Lay a prosciutto slice on a chopping board, then a chicken fillet on top, add a layer of cooked chopped spinach, then cheese (your choice but not too runny when melted). Roll on itself, possibly starting from the smaller end if the fillet is not even. Seal with a toothpick. Repeat.
Roast evenly in a pan with olive oil and plenty of sage leaves.
Quick, cheap, tasty! (Poor picture again, was too hungry)

Last night experiment:
Red wine beef stew baked inside a pumpkin. Nice presentation and good contrast of flavour. Only problem is the pumpkin sweetness was too overpowering towards the end.
