Considering the kinesis is 73.5 in the largest size and the Genesis is 72.5 the offset of the 1 degree can be compensated for by seatpost offset...?

I'm on an inline post on my ribble with a 73.5deg seat tube. I wouldn't want to go any slacker than that. And the head tube of the the biggest Genesis is about 25mm too short for me... There really aren't very many options for me :'(

Also, there's only 5mm head tube difference in the Genesis and kinesis. Here's the 2016 geo attached for the Genesis.

Huh, that's weird, the Genesis geo chart I just looked at had a 190cm headtube for 60cm.
And yes, short thigh long calves and big feet, it seems. It's not right on the max, but it's not far off. My fixed gear has a 72.5 deg seat tube and that's beyond the max, as far forward as it'll go. Wouldn't want to do that on purpose with any future bike, I'd rather just get one with correct geo.

Is that where it's a perfect position for you or do you think you benefit from the saddle set further forward?

I think that's just about perfect position, but maybe a little further forward would be better, hard to tell as I've not been able to do it, obviously.
I have been thinking about selling my fixed because of this, but there's not much out there instead of it, again because of seat tube angle and frame size...

Buying track frame may help, like the Dolan FXE where the largest model have a 74 degree seat angle.
Personally, I think your scenario might be worth looking into a bike fitting to ensure your next bike will be 100%.
My custom bikes (both of them) have the saddle slammed forward despite having a sensible 73 degrees seat tube, look a little off but still feel comfortable.

Hey Ed, I had a bike fit. Went to see Scherrit which was how I found out I needed the saddle so far forward.
I briefly built up a Precursa but the front was way too low and there's a ridiculous amount of seatpost on show.

What I would recommend is to make sure the saddle is set where you like it according to the measurement Scherrit gave you.
If it's fine with the 72.5 angle, then least you can able to look for frames that's between 74 to 72.5.

Yeah but aesthetically and comfort-wise I'd rather a steeper seat tube than be straining at the absolute limit of the seatpost/saddle combo to fit onto it.

Ah i didn't realise they were exclusively flat mount, thought they'd work with both and be a bit cheap than ST-RS685. My frame can't take flat mount so . . . csb

I may be wrong but sure you can use the 105 levers with the RS785 calipers which are post mount or IS with an adaptor and about 40 quid each.
