I've never made a climbing wall but done tons of timber framing using the same methods.
Invest in a big roofers square. Measure to the centre of your batons, add horizontal noggins between batons for extra rigidity. Measure twice, cut once etc and it'll be fine. Use a proper mitre saw if you can get one.
Use glue as well as screws on all joins.
8'x4' sheets are rarely true measurements and cheap ply is really hard to work with. Get 18mm Wisa board.
