The bike isn't that old so you will find all the parts online.
A Jagwire brake/gear inner/outer cable set is about £7 posted on eBay. You can choose loads of different colours.
Chain / tyres / bar tape / brake pads will be available on Chain Reaction or Planet X at a very low price.
You will need to buy some 0000 wire wool and some steel polishing paste for the chrome and alloy but you can get that cheaply on eBay/Amazon.

Hi,
I recently bought an old 1980's Peugeot Road Racer Bike. It needs a fair amount of work: new brake cables, new chain, new tyres and inner tubes etc. and I was wondering if anyone could give me any advice on sourcing the parts? And will it be difficult to find parts because it is an older model?
