i'm looking for a bike i can do some mild offroading, some cx, put bags or panniers on and go touring on, or put some skinnier tyres on and ride it on the road/commute on it.

Thats at least 4 bikes you are talking about there ;)

In all seriousness, combining bikes has NEVER worked out well for me.

also he says you can't have it because you'll put brakes and a rack and full mudguards on it.
