Do Ultegra LH shifters have a switch like XT LH shifters do to change from 3 chainrings to 2 or is it just a case of tuning with the limiter screw?

I think they come as double or triple versions and can't be interchanged. If it feels like a triple shifter it's just the trim stops.

Have looked around the web a bit and it would seem that 6800 only comes as double. Is there a half shift so that the big chainring can use a larger range of the cassette? Bit of a noob with road stuff.

something like that or there's an extra trim to move the mech outboard to stop rub when using the smaller sprockets

There are two four positions, two of them are trim.
