Wondering whether the single speed would eventually bug me though and I'd be better going for the cooker 1.

That really depends on what you plan to do with it.
- A few hours mucking about in the local woods = win
- Multi-day ride in mountainous terrain = maybe not so much

You can put 5 sprockets on a hope singlespeed hub, but probably not worth it.

Yeah, I had considered the 5spd as an option for my Talbot, but ditched the rear derailleur cable guides at the last moment.
