Hm. My pals are constantly on at me to give CX a go. Don't have money or space for a proper cross bike so I'd take my town/winter bike, switch out the fork and front wheel and have something like this

There are clamp-on plates for keirin bikes. You could use one of those maybe with a longdrop caliper brake?

I used to run my sis mountain bike with a disc up front and a V on the rear, back in the day, it worked well and can be easier depending on the nature of rear drop outs.
