but the cog spacing isn't the same for 6/7/8 surely, so the derailleur won't sit in the 'middle' of the gear...

Any differences are very small if at all and there are always differences between manufacturers of cogs, chains etc.
In practice there is sufficient freeplay and movement in the whole system that the indexing just dumps the chain on the desired sprocket and everything works fine. -

But why non matching wheelset? These have been tradutuonally built with double silva discs with rossin decals or double ghiblis or khamsins with rossin decals :)

Khamsin and scirocco are made of same material and are a good pair in a tt bike. Ofcourse owning a set of khamsins and scirocco you can use double discs with low wind and scirocco in windy conditions :). This is going to look awesome!
