This sounds amazing! What you've done so far is so impressive. I am really jealous of your level of ability to make stuff.
I have always wanted to learn to sail and this sounds like a real opportunity for an adventure. Looking forward to seeing the progress, and I'm very keen to join you for a few weeks on the sea.
