Should be able to, may just require lots of careful taping.
You're not going to try to colour coordinate the parts to fit each side are you?

It'll require you to tape up half the bike which may become tricky around the lugs if you're pedantically neat, if you go about it as I assume you would.
As in having it so on one side of the stem its black and in the other its white kinda thing.

I think id just do the frame and fork because the handlebar and stem is under warranty

Honestly this will turn out
horribleunlike you imagined unless you have the steady hand of a brain surgeon.I would avoid repainting your bike even if you'd mask and prepare it properly (have you thought of how much work it is to spray your bike? Sanding it down, primer/base coat, actual paint coats, clear coat, et cetera).
Even if you're finally done and the result is semi nice, the paint will never be as good and strong as the original, factory paint. Repainting your bike sounds like a cool idea on paper, but without the proper tools and investing a lot of time in it, it will turn out not so great in practice. Just my two cents though.

I saw the winners bike which i think looks amazing (paint split down the middle)
so i did some research and saw something similar:

Do you think that i could recreate a similar thing so that one side is black and the other is white?
