i know the place quite well, my girlfriend grew up near strasbourg.
The Vosges are great for road cycling and mountain biking as you can take on the elevation in gentle or hard way. and scattered in the mountains are some open mountain huts/bivvys to stay for the night or close to which you can camp.
the route you have is pretty good, but i wouldn't avoid the Donon which is a nice with ruins of a small pagan ( i think ) temple on top.
Strasbourg is pretty nice, very flat, but you can cycle across the border to germany and do a nice loop , there are infinite gravel cycle paths along the Rhine. the area has become pretty cycle friendly with the german influence.
