I recently had this dilemma for my Colnago. Decided to go for the Nitto M106 NAS handlebar for a few reasons, but glad I did. They have a lovely shape, slightly flattened area for bar to hood transition. Heat treated, so assuming they will be stiff enough and being nitto have a great finish/build quality.
Attached a couple pics from phone. Still work in progress, so not set on positioning yet, levers might get nudged forward a bit, but gives you an idea. Reckon shimano would be an even nicer fit. I know the m194 ssb (I have on my Roberts) are designed to work best with them, maybe the case with these. I have campag on both though, meh.Only issue for you is the compact drop, if you can live with the 78 reach, 128mm drop? Wouldn't doubt they have a deeper drop variant?

ritchey classics are 31.8.
There's not much available these days in trad bend and 26mm. I like the deda 215 shallow, which fits great with campag, they did a deep as well. Might be able to find them s/h?
Cinelli 64/66 reissues don't work amazingly with modern shifters imo.I wasn't impressed with my Soma Highway ones. too flexy and shape wasn't great.
Nitto probably have something close, but it's difficult to know with their old-school internet presence.

These Bontrager SSR VR-C might be a bit shallow but have a nice flat transition and come in 26.omm, should be able to find them for cheap on EBay etc...

What about a 31.8mm bar with a trad ish bend that works well with modern ergos?
I currently run Deda Newton deep drop on one bike which feels comfy but looks slightly wrong. -

Classic forum statement.
Other classic drops - FSA energy, 3t rotundo, ritchey classic. Pretty much everyone still does a classic bend bar. It's just preference, like saddles. -

Deda 215 Anatomic have a flat transition and a deep drop, but the angle on the drops can feel quite steep (hard to see in this pic but you get the idea):
Noodles are almost flat on the drops and have a nice deep drop shape:

Hi, I'm building a bike at the mo which has threaded forks. I'm deciding between running a quill stem, a converter with OS stem or buying some threadless forks and threadless setup.
If I go with the first option, quill stem, what bars can I buy in 26.0mm that will work nicely with modern levers regarding a nice transition onto the hoods. Traditional bend, deep drop.
