Nice build. Could one do this with any 29er?

In theory yes but the results wouldn't be as good.

Fargo has a much shorter top tube (and fairly short wheelbase) with a fairly high headtube so its a bit more suited for an off road drop set up. MTBs in general tend to be a bit too long for drops.
