I'm now thinking my mystery click is coming from the cassette or freehub. Started out quiet today, about 30k in the ride started clicking again, but this time it was doing it when I wasn't pedaling as well and when I hit small bumps.
Gonna clean out my freehub tomorrow and see if that solves it. Tryout a different cassette as well.
