Whatever you go for mount them with a load of tyre clearance so off-road grot doesn't collect and scrape.

Get the biggest possible, Compass Bicycles is releasing a 650b x 48mm tyres soon.
At leasty 52mm or above.
This is why I spec my Elephant NFE to be able to run 650b 2.1 tyres in the first place.
