I'm no faster on 53:39 than I am on 50:34.. Anyone who thinks they need anything bigger than a 50:12 (109" is huge) for general riding is either a hero or willy waving... Or just needs to learn to pedal.
The real benefit of proper road doubles is that you can use the small ring for more than just bailing out on hills and spread the chainring wear out a bit. You get to spend more time in the middle of the block too.

Not buying the chainring wear issue though.. If you spend more time in the middle of the block by using both rings wont you just wear out the middle block quicker?

Well, no not really. Middle of the block means the chain, cassette and chainrings should wear slower as the chainline will be straight most of the time. Also more efficient, less noisy etc.
It's personal though I suppose. I prefer to change the front more often than be up and down the block all the time - that bike (53:39) does have di2 though, so front shifts are no more effort than a rear.

I'm tentatively looking about for a nice, tradition looking rear mech for use with shimano 8 speed thumbies or trigger shifters and probably a wide range rear cassette. Obviously second hand / nos, but ideally nothing that will break the bank.
Does anyone have any suggestions?

Except the bit about 52/53x11t being useless. That's 60kph @ 100rpm. I use this often and I'm not fast (ftp 240ish, 60kg).

I did think about that but it's for an 80's mixte with a mishmash of suntour bits so I'd rather something a bit more aesthetically suitable.
Plus on the pretty vs practical scale looks are important.
