Its a 1 1/8 headtube but that does not define the angle the bearing seats are cut too. If its 41.1mm then it is the cane creek standard but There is the campagnolo standard at 41.9mm and fsa Satandard at 41.6mm.

Just send an email to Cane Creek and they will sort you out with the right headset(s). I did it and they replied the same day with few matching models, from cheaper to more expensive ones. I went with the 40 IS42 Short, best buy.

Token do a cheaper version and they are just as long lasting. Measure your headtube id before you buy to ensure you are getting the correct kne. You must use a vernier not a ruler.

The headset on my Storck has been feeling a bit rough recently, so I'm going to replace the bearings. My mechanical knowledge is appalling, so go easy.
Having disassembled everything, the bearings have the following digits -
AC3041-45-2RS
AC3041-36/45-2RS
Can someone interpret this for me and show me what I should be buying?

Bit of info here to decipher all that, but appears they're fairly standard Cane Creek bearings http://www.cube.eu/fileadmin/user_upload/documents/faq/Headset_Identification_Guide.pdf
