I think the only 7 speed Shimano STIs were RSX and they would typically require a Shimano rear mech to work with. The shifters will make the Weinmann brakes even worse as they pull too much cable. You'll also need some kind of cable stop where the current gear levers fit and so hopefully they are the braze on type.
Looking at eBay you'd do well to get the STIs for £30, rear mech for £15, brakes for £20, cable stops for £10, new cables throughout? £30, bar tape £10... -

Yes, that's right, the only 7 speed brifters Shimano ever made were the first gen of RSX ones from the mid 90's, the later versions were 8 speed:

I bought a pair of the 7 speed ones for a project that never materialised, and have the matching rear mech, not sure if I have the front mech too, but if interested I'd sell them, pm me for details, they look identical to the photo on the Velobase link...

The one I have on Ebay is 7 speed and not RSX.

Yeah, I've had those Sora shifters, when I said about the RSX ones being the only 7 speed brifters, I meant shifters with the double paddle mechanism. The Sora use the thumb button and brake lever combo...

The ad is in Dutch but... this man has a pair of 7-speed shimano brifters up for sale:
considering any old shimano rear mech (except old dura ace) should work with the 7-speed cassette that's what I would be looking at. Or friction shifting. Or holding the shifter cables under your armpits while riding.

Currently have indexed downtube shifters and would like to have brake lever shifters. The rear mech is an old Sachs and the cassette is a seven speed Shimano. Not entirely sure what compatibility goes on there. Looking for relevant cockpit shifters.
Also after some brakes as the weinmann brakes I leave a lot to be desired.
