If I went rim-only I'd be tempted for 24/28, brass nips, 2 cross front/ 3 cross rear (or similar, to the builder's advice) to add some durability. Keeping the rim weight down is nice, but overall wheel weight isn't something that bothers me too much.
Is there a UK distributor other than Superstar? I'm guessing ordering direct from BHS comes with all the fun of customs-bingo and expensive shipping.

Definitely tempted by the rims - will consider having the build done locally (or lacing them myself as you suggested). One to mull over.
