I have both, and I'm switching to ATTACK in all bikes due to knee issues. For my experience:
Secure feel (unclipping): XC8 in the hard setup is harder to unclip. I unclipped SPD skidding, but to be fair it was a +10 year old pedal+cleat combo, never happened with newer ones.
Clipping: SPD seems to go in easier
Weight: XC8 are way lighter, but I have the cheapest SPDs. Still will be lighter anyways but can't tell by how much
Durability: can't beat the SPD those things are indestructible. Last pair I binned was more than 10 years old and spinning better than anything I have, never had to service them (Spent their life in sunny Spain mind). Cleats are equally rock solid
Price: SPD all the way, cheaper pedals and cleats available
Feel: I like the floatiness of the ATTACK. They seem better in the upstroke too
Looks: ATTACKS have shouty graphics, but you can get them mavic branded for a understated look. Shimanos are better looking if you have a silver crankset

It's for fixed gear and I've already experienced that SPD-SL are not the way forward for fixed.
Sorted myself a pair of Giro Republics, for a classic style, just need a pedal system to complement my bike.
