I second silver rims, budget Novatechs to a destickered budget wide rim (A119) and some nice big gumwalls (28/32mm) won't cost much and will look the part.

And fill up the gaps where 27" wheels would have sat.

Panaracer Pasela can be had for ~£20 each.
