Got creative over the weekend, Italian flag tricolored ravioli with ricotta and butternut squash stuffing, in a light walnuts and sage butter sauce.
Given the date of today and the color of Mexican flag, I'd say these could be a good Cinco de Mayo celebrative dish as well!
Effort was well paid back by taste and pleasing visual effect.
