Everyone with 7ooc rim brakes already has a 700c sized rotor.
I'd imagine hydro rim brakes up the modulation a tad whilst granting you curiously ergonomic but utterly fugly shifters and the maintenance lols that come with hydraulic stuff (i.e. no maintenance at all or random and complete failure due to some gotcha you were unaware of) and retaining the problems associated with using your rim as a braking surface...weight, heat build up, wear.
Doesn't seem worth it to me - I've never thought ohhh I could use more mechanical advantage and modulation on this caliper brake. Hyrdo disc or GTFO :)

also, I think I would quite enjoy riding with those hydro levers. My hands tend to wrap around the top of my hoods anyway, so it'd probably be quite comfortable for me.
