Any derailleur really, at the moment the Shimano Sora rear is quite cheap in Wiggle. .
Mate it with a 11-32, with the 39t inner I reckon you got enough range, very similar to a typical road bike with a 28t cog and 34t inner.

In theory, you still need to use 8-speed chain on an 8-speed cassette, but the 9-speed dérailleur cages have enough wiggle room to fit the fractionally wider chain.
Shimano 8/9/10 work well with each other.
Some 10 speed derailleur might be a little tight but still work.
Hell I even used an old 11 speed chain on a 7 speed hybrid, obviously not 100% perfect but still work.
