...they used a normal shimano BB installer tool to fit them on. No need for the so called 'rotor specific' BB tool.

The shifters still normally come with some. If not then whatever stainless slick are fine, I usually use jagwire as that's what we have in.

Big fan of Jagwire's Racer kit. Gore sealed if you can get it.

Trying to decide if I should keep using the alligator Ilinks cabling.

They still come with cable and housing, if you're talking about those disc shifters, then the cable and housing are plentiful providing you follow the instruction (and not get the coating on the cable too scratched up).

The quality are DA, stick with it.

Do tandems require extra strong headsets?

Or to be more exact, is there a headset out there rated to take about 30 stone of riders?

It's just this bike is used in all conditions, so wondering if the sealed cable run would be better.

Will use the shimano cabling to start with and keep ilinks just in case.

They've always made do with solo bike components. If you use an old-school headset, you can squeeze a bit more load bearing capacity out of it by binning the ball retainer and running full-complement loose balls.

Put a steel/alu mudguard on with longer mudflap if you want to keep the cable and drivetrain clean.
