Did it on a fixed two years ago when I joined the charity event. Pretty ok, except when we got to the beacon.. Had to get off as somebody in front of me stopped and I lost my momentum after that.
So to answer your question, you can use any bike to get to Brighton from London. It just depends if you yourself can actually do it.
