From what I understand the TT on the custom Venge and custom Roubaix you linked to both sound like they're 60cm.
I'm 193cm and riding a CAAD10 60cm with a 59cm TT, 120mm stem, and 25mm setback post. HT is also 190mm but I currently have the conical spacer on top. 44cm trad bars.

Pros generally prefer longer top tubes and reach because they are mostly in the drops with a flat back for most of the race, whereas 'civilian' riders probably tend to sit up for the most part and be on the hoods.
When I were a lad...the adage was small tubes (frame) long parts. In other words keep your frame as small as possible and make up the length with a longer stem, cranks and seatpost. -
