Are you pushing/going very quickly? Intrigued by this, I've done up to 6 days of 100+ miles per day and never noticed any loss of appetite. Doing a circuitous 9-10 day LEJOG this year which will be comfortably 100+ a day and the eating was one of the things I was most looking forward to. And the beer, obviously. Got to wash it all down with something... hope I don't suffer this.
My experiences come from trips longer than a week. I get to the point where I know I need to eat, but am so fed up with just shovelling it in that, mentally, it gets tough.
I've no idea how Steve can keep going day after day after day. Mentally he must be very, very tough.
