I've seen that stuff pop up over the last year or so as a bit of a thing, then I realised it's just the Vietnamese chilli sauce that we all know and love... It's lovely and all but I don't really get the hysteria...

I have been making my own hot sauce with habanero peppers, mixed vegetable pickles especially the carrots (from lebanese store), garlic, white vinegar , and chachere's cajun salt. For the garlic I roast it in a dry pan on the stove for a few minutes. then I blend it all and pour it into a bottle. It is good that way because I can adjust the heat/flavor myself.
Otherwise I like most of the melindas sauces.

I would like to make my own actually, so a simple recipe would be good. Not sure which chilli to use if I did, I did wonder about Naga previously but then I tried mr Naga:
Wasn't amazed by the flavour, I thought it was rather sharp and acrid (probably becuase its a pickle. I would love to make it with these:
If i knew where to get them fresh, they've got a really nice warm rounded smoked flavour.

@Spotter I currently have about 30 different bottles of hot sauce.. I bloody love the stuff!
- Franks hot sauce is good so is the extra hot version.
- Melindas as above comes in several varieties, all I've tasted have been good.

I think if you get them fresh you will not find them smoky. That comes from the drying.
