Le Manfriend did Scotland with us on an SA S3x hub, I believe 42/18 with a saddlebag/handlebar bag (we didn't bring that much)
It's possible, and I was on the granny ring for some hills (ow hai lots of 12-15% and some short 20% hills) as long as you gear it low and accept you will lose top speed on the flats/hills.
