OK so after using my Audio Technicas for a month I'm blown away!

Using them with Fiio e07k amp on the PC and my ipod.

Now it has me hankering for a decent speaker set up. Am I better going down the AV route so I can use through the blu ray player too?

Or is stero a better choice?

I'm completely new to this!

stereo, you need to spend far far more on surround to get the same level of quality, not to mention that a lot of films (unless you exclusively watch big budget action) barely make use of the additional channels.
Most blu-ray players have the ability to downmix to stereo.
