SRAM brakes are very good. I'm pretty sure the drop is the same for Apex/Rival/Force.
As for the hoods, you can adjust sram levers too, I find them totally fine for leverage and power. I don't have huge hands either, usually a size small glove! Go see if you can test ride a sram equipped bike. If you can afford it, Rival or force is good.
Double tap shifting is great and should take no time to get used to. Yes, the FD's can be less than perfect but I believe this is mostly fixed now, and if you get a compact 50/34 you'll barely need the inner ring anyway.
