the bikes takes 26" wheels. Stick with that. I suggest RibMo for the tires.
As for the brakes, they're lovingly called "990's" (aka the u-brake) and shouldn't preclude you from building whatever type of bike you want. you just need the correct brakes. they're readily available for not much money.
