I've decided to sell my ESB to finance this and get things moving a bit quicker.
I've got the ergonova bars to try from @sumo, thanks again for them mate.
I'm probably going to get one of those cheap Kalloy Uno stems in 130mm to confirm the length that I need before I buy something flash.
Wheel wise i'm looking at Kinlin XC-279, they seem to be a similar to HED Belgium, laced to Novatec SL A291SB-SL & F482SB-SL. I'll get @CleverMike to build them, as I was very impressed at his work with @Dom 's wheels

Kalloy stems are perfectly good. I have a BBB one with black on black decals which is quite nice too.

The bike that these wheels are for is currently in a variety of boxes, which makes it hard to ride - so they are brand new and unused.
I'm currently just stretching the tyres on them, as they were an absolute bastard to get on - way, way harder than tubs, to a really stupid degree, which hopefully with a bit of time spent on the rim will improve.
I have been a unique combination of horribly poor and horribly ill, will do some updates later this week.
@Sumo we'll see what bars I go for and work off that.
