Forgot to reply to you! I could live with similar, have done on other bikes. Imagine the end of the mudguard stay hitting your toe, roughly where the white bit on your trainer ends :/
It's fine for commuting, but took the mudguards off and went riding mtb trails in the woods and it was a right fuck on. You're probably right re: suitability there, though.
Re: toe overlap.
172.5 crank arms on a Large v3 here too.
Easton EC70X fork is 45mm rake, and I get a touch of toe overlap on flat pedals + mudguards, but none with SPDs + no guards.
Versatile bikes, but if toe overlap's that much of a problem you should probably buy a different frameset for your uses.
