I hose them down as soon as I get home, usually whilst wearing them.
Follow that with a good scrub when you clean the bike, then newspaper inside, leave them by the radiator for 24 hours, newspaper out, open them up as much as you can and leave them by the radiator 'til they dry.
It is much, much easier to keep them clean by getting the mud off whilst it's still wet. Dry mud can be removed (with a stiff brush, I use a decking brush if required) but it's harder to shift than wet mud.
