As I'll now be able to use my torque wrench, what sort of range do you recommend with the System Ex/On-One etc hubs?

I think 30Nm should do it. The hub threads have to withstand 100Nm+ when big blokes do hard standing starts (1500W @40rpm 165mm cranks 50/14 gearing = 100Nm at the hub), but all the other bike threads of comparable size are specified as about 40Nm.
