A higher pressure tyres give you a much smaller contact point, so all (hypothetically) 100kg of you and the bicycle are in this tiny contact point that does not provide much "give" at 100psi.
The main reason why people ride at this pressure, is because it feel faster.
This mean that when you run over a debris, it have a much higher chance of getting embedded.
A lower pressure tyres provided not only provide a wider contact point for all 100kg of you, but it have a lots more give to prevent the debris from getting embedded in the first place, providing that you drop the pressure accordingly.
Think of how jarring it is to hit a pothole with 23mm and 120psi, compare to a bigger tyres with a lower pressure.

Finally got round to taking some photos. Bar/lever angle is still being tweaked, since taking the photos I've made the bars more horizontal and brought the levers up a little.
Had another puncture and am now on the search for 700x32 Panaracer Paselas (folding). I'm hoping that checking the tyres weekly and picking any stones/glass out of them will help ward off the flats. I've been dropping a bit of super glue in the holes after removing debris, is there a better way of patching up the nicks and holes in the rubber?

So far they are great, I thought they were going to be more flared as I seem to remember the Straggler in Kinoko having much more angled levers.
The reach and drop is much shallower than my old bars, my neck/back is thankful.

Thought I'd try fitting the 41mm knards as an interim solution until I order new road tyres.
I was pleasantly surprised that they fitted with only minor mud guard fettling.(albeit very snugly on the rear).

I got my paselas from SJS.
I love the build (unsurprisingly). looks really good, the panniers look awesome.

Nice moog! it's looking good. my Paselas have been completely puncture free so far and that includes riding from london to bristol on tow paths and my 30 mile a day commute. Can't recommend them enough!
