They don't make Paves in 23 - until this year they made them in 24's instead of 25.. so maybe look for them? The problem is likely the wider rims you are using - tyres always come up bigger on them.
In terms of Rubino's vs Pave - I've used both pretty extensively and I can safely say there is a big difference; in rolling resistance and especially in handling.
Rubinos (especially in 23mm - where you have to run them at higher pressure) are about as good in the wet / loose stuff as a pair of roller skates. Whereas Paves are the best handling tyre I've ever used in mixed conditions.
If you plan on riding in straight lines and braking heavily for corners, Rubino's will be fine (and last ages) - but I wouldn't touch them with a barge pole after losing my front wheel a couple of times in greasy conditions. I decided a while ago that life is too short for crap tyres.
I've been running the green Open Pave GC III 25mm (run at 25.5mm) on 23mm wide rims recently and am really happy with them - I feel very confident cornering in the wet at speed etc... just added some pdw guards to the bike and am so close to getting them to work, clearance is pretty tight so I've picked up some cheap 23mm Rubino Pro's on here (apparently run around 24mm) to see if sizing down will solve the 'just slightly rubbing on guard when seated' problem on the rear wheel...
While I wait for the new tyres to turn up, my question is will I notice a huge difference between the Pave and Rubino Pro? anyone know how greatly the tyre compound differs? would anyone want to buy a lightly used, 2 month old pair of green 25mm Paves? anyone have the 23mm version and want to swap?
