I would just work out the price of parts(full retail) and then add/subtract to find your labour charge, if they don't stock parts you requested or use the right supplier for them it soon adds up. Put it side by side with someone like @varno of vsprint if you feel they are a decent wheel builder. Most wheel builders are open about prices and you pay the premium for the skills they have.

Hubs are basic but not crap.
Nipples usually come with the spokes I buy.
I make parts around £190 give or take.Wheel building is skill/time and should be rewarded.
£20-£40, depends where you look, if it is a shop or individual, spoke pattern..Edit. However much postage costs.
If you are in town I would just get Arup to do it. -

pick up the dura ace on open pro advertised here for £200 ready built
better hubs better rims ( well personal taste ) better price
they appear to be sold, but for £200 you can pick up a much nicer set of 2nd hand wheels if you search around, better investment in the long run

Avoid alloy nipples unless these wheels are never going to see rain.
I'm looking for some advice on pricing.
I've been quoted £320 including labour and delivery for the following build.
Is it about right? Am I being overcharged? Have I found a good deal?
32F/32R Black H plus Son Archetype rims
Black Ambrosio track hubs
Black Sapim race spokes
Black alloy nipples
Also, what's everyone's opinion of the Ambrosio track hubs?
