Are you using the adjustment screws in the dropouts? These can rattle a fair bit, even on the track. Make sure they are either taken out or screwed in to be snug.
Are you using a 3/32 sprocket? A 1/8 chain will move around on it and be quite noisy.
It could be that what you are describing is chain suck. Are you using a worn or cheap sprocket? Using something like a Dura Ace or Phil Wood instead will help.
You could also try running your chain a touch tighter.
the chain adjusters are well tight lol. It's a 1/8th miche sprocket. Chain glides on and off the teeth like a dream. I may try cranking the chain tighter this evening.
Green tape has gone. Changed for carbon bars with black tape. Waiting on te right saddle.
